INGREDIENTS:
Roast Beef
- 2.25 lbs Lean Beef
- 2 tsp Curing Salt
- 1 tsp Powdered Sugar
- 2 Tbsp Liquid Roasted Beef Concentrate
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp White Pepper
Ranchero Sauce
- 3/4 C Ketchup
- 1 C Light Corn Syrup
- 1/4 C Cider Vinegar
- 1/4 C Light Oil
- 1 C White Sugar
- 1/2 tsp Salt or MSG
- 1/2 tsp Paprika
- 1/2 tsp Onion Powder
- 1/4 tsp Pepper
- 1/4 tsp Garlic Powder
Cheese Sauce
- 1 Tbsp Butter
- 1 tsp Salt
- 1/8 tsp Cayenne Pepper
- 1/2 C Whole milk
- 8 oz Kraft American Cheese Deluxe slices
Onion Rolls:
- 4 C Bread Flour
- 2 1/2 tsp Dry Active Yeast
- 1/2 C Warm Water
- 1/3 C Sugar
- 4 oz Melted Butter
- 1 tsp Salt
- 1 Egg
- 1 cup Hot Milk
- Dried or Granulated Onion
- Poppy Seeds
INSTRUCTIONS:
- In the bowl of a stand mixer, stir the yeast into the warm water, let it sit for 5 minutes. Next add hot milk, sugar, melted butter, salt, and egg. Mix well
- Add the bread flour, and knead with the dough hook. Mix for 8 minutes until the dough comes together and is slightly tacky.
- Lightly flour your work surface and work the dough into a large even ball
- Place the dough ball in a greased bowl and spray the top with additional oil to prevent the dough from drying out. Cover with plastic wrap and place into refrigerator to rise and double in size.
- Remove dough from refrigerator and allow to come up to room temperature. Then shape the dough ball into one large roll by tucking the edges underneath. Place the dough into a buttered 8" cake pan, cover with a kitchen towel and allow to rise again.
- Brush the risen ball of dough with the egg wash and place in a preheated oven at 350 degrees F for 15 minutes then brush with melted butter and sprinkle with minced dried onions, cook for another 15 mins or until completely baked through. Remove from oven and set aside to cool.
- Make the roast beef by cutting the beef into cubes 2 x 2.
- Take 1/5 of the meat and put in a meat grinder or chop in a blender. This step is made so that the roast beef with small pieces will stay nicely together.
- Put all the meat into a stand mixer bowl and prepare the brine.
- In 1/4 cup of water dissolve 2 tsp of curing salt and 1 tsp of powdered sugar.
- Mix the meat with a dough hook, it is not only simply mixing but, the meat must begin to secrete a protein. This can be determined that the meat begins to be sticky. After 10 minutes, everything is sufficiently mixed.
- Place a bag into the Meat Press and then put the meat into it in smaller portions and always push well to avoid air in it. Close the Meat Press. The meat will be permanently compressed.
- Put the Meat Press in the refrigerator, and let meat rest for 24 hours.
- After this time put the ham cooker into a sous vide container and add water so that almost covers the ham, but that water does not get inside of Meat Press. Bring temperature to 175 degrees F. Set a timer for 2 hours. Cook until an internal temperature of 165 degrees is achieved.
- After this time let the Meat Press cool in cold water but do not let water go inside. It takes time, at least an hour in icy cold water.Only then you can open the ham cooker and take out the ham.
- Make the ranchero sauce by combining all the ingredients in a bowl and setting it in the refridgerator.
- Make the Cheese Sauce by melting down the butter in a sauce pot, add the seasonings and milk and heat up, then melt the cheese into the milk stirring consistentaly. Set aside.
- Pull Arby's Roast Beef out of the Meat Press. Reserve all the liquids in a pot aside the deli slicer. Slice the Arby's Roast Beef and soak in the residual juices.
- Cut your bun and build your sandwiches with bottom bun, Ranchero Sauce, Arby's Roast Beef, Cheese sauce, and top bun. Dig in!
